Welcome to Gex Forums! I personally like Gex 3 the most, but I say start with the first one. Enter the Gecko and Deep Cover Gecko are 3D platformers but the first one is a 2D platformer btw. ;) There's also the handheld games on the Gameboy Color too if you're interested, though there's only Enter the Gecko and Deep Pocket Gecko.
